Recipe found via The Everygirl: Gluten-Free Banana Bread
I’ll be the first to admit, I HATE bananas with a passion. I can’t stand the smell of them or the taste. However, somehow I can tolerate them in Banana Bread form! My sister LOVES her bananas and knows exactly how to push my buttons. She will purposely eat one while I’m driving in the car and then lay it in one of the cup holders or hold the peel in front of my face ( I would never do something like this to her while she is driving 😉 ). I always always make her roll down the window and toss it out. She usually freaks out, but I’m always like, “Michelle, its biodegradable and if anything the birds will eat it all up!”. Hopefully… but either way, I got that strong smell out of my car.
Now, since I’ve wasted five minutes of your time confessing my hate for pure bananas, I must admit that I just love these banana muffins. They are seriously delicious and so easy to make! Plain banana…NASTY, yummy banana muffins…YES! While I do love this muffin recipe, I prefer it in bread form. When I make it, I just mix it all together and pour it into an 8.5 x 4.5 Bread Pan, like this one here. The bread seems to hold more moisture but the muffins turn out just as tasty. I usually soak them both in almond milk, so it really doesn’t matter and I am also lazy, which is why I prefer making the banana bread. EASY AND DELICIOUS! These will not disappoint.
